What is a Jersey apple?
The Jersey Black apple is an old North American variety of apple, or Malus domestica; it is thought to have originated c. 1817, but has fallen somewhat out of favor. It is also known as the Black Apple because its skin is very dark red, appearing almost black. It is a dessert apple with sweet white firm flesh.
Jersey Mac is noted for its sweet, strawberry-like flavor and bright white flesh. It has a tough, dark red skin. Jersey Mac is ready for picking in late August.
It is good for fresh eating, pies and applesauce.
An old American apple once known as Black Apple because of its very dark colour. Origin: USA, 1817. Pollination: Jersey Black is self-sterile and would require a pollinator to produce a crop.
There are over thirty varieties of apples grown in New Jersey including Braeburn, Golden & Red Delicious, Fuji, Gala, Jonagold, Rome Beauty, Granny Smith, Winesap, McIntosh, Pink Lady, Cameo, York, Ginger Gold, Jonathan and many more.
If you have a sweet tooth, you're going to want to head over to the other end of the scale where you'll find the Fuji, Honeycrisp, Ambrosia™, Gala, Golden Delicious, and Red Delicious apples. These sweeter apples contain more natural sugars and can hide any tart flavors even if they are more acidic!
The Jersey Mac is a semi-sweet, semi-sour apple. This apple becomes red veined when very ripe and is delicious to eat as a snack or to make apple juice and apple sauce. Apples help regulating cholesterol.
Instead, Mickey D's makes their pies with six different types of apples — Jonagold, Fuji, Golden Delicious, Gala, Rome, and Ida Red, all of which are homegrown in the U.S. And the apples are sliced instead of diced, so you'll notice big chunks of apple in every bite.
There are a few apples that don't make the cut. While great for snacking, Gala, Fuji and Red Delicious are the most common apples that won't hold up in the oven and will give you a watery-mushy pie, tart or cake.
McIntosh apples are still a cultivated variety in the modern-day, but growers have decreased production due to the apple's soft, easily damaged flesh in favor of modern, hardier cultivars.
Why are my McIntosh apples red inside?
The presence of red flesh in apple cultivars is caused by the MYB10 gene, a localized genetic protein and transcription factor for anthocyanin pathways. Anthocyanins – which are a type of water-soluble polyphenolic pigment – give fruits and vegetables their signature shades of red, purple, blue or black.
It is a bit more tart than McIntosh which makes it great for cooking, baking, and applesauce. It is recommended to use a thickener when baking pies since the flesh cooks down quickly. This tree is also a good cropper.
Even though the crab apple is the only variety native to North America, thousands of types of apples are grown in the United States. Red Delicious, Fuji, Golden Delicious, Braeburn, McIntosh, Rome, Granny Smith, and Gala are a few of the most popular varieties grown in the U.S.
The only apples native to North America are crab apples, which were once called "common apples". Apple cultivars brought as seed from Europe were spread along Native American trade routes, as well as being cultivated on colonial farms.
The crabapple is the only apple native to North America.
Red Delicious
According to the Journal of Agricultural and Food Chemistry, certain compounds (polyphenolic) found in apples may play a big role in human health. Studies show that Red Delicious apples are higher in these compounds than many other types and the vast majority of nutrition lies in the skin of the apple.
"They can last six to eight weeks stored in a refrigerator," says Wortz. Scheck notes that if your room temperature is on the warm side, the refrigerator is ideal for storing apples for any amount of time. The countertop is an option for shorter storage; apples can last one to two weeks there.
Cortland. Cortland apples are similar to McIntosh in shape (round and squat) and taste (creamy and tart).

What kind of apples does Martha Stewart use for apple pie?
Martha Stewart's Old-Fashioned Double-Crust Apple Pie
Cortland or McIntosh apples, Granny Smiths or Macouns—the most important thing to remember when baking this pie is to use tart, crisp, fresh apples and lots of them.
Packaged apples found at McDonalds or in your local produce section are usually treated with a solution of calcium ascorbate (a blend of calcium and vitamin C) or citric acid (found in citrus fruit) to maintain freshness and color. Both are very safe to use on fruit that will be consumed.
In 1992, McDonald's switched from frying its apple pies to baking them to quell health concerns. Today, nearly every McDonald's in America serves baked apple pies that are somewhat "healthier" than the beloved fried version. But customers in California and Hawaii can still get the deep-fried version.
Our favorite apple pie recipe calls for Honeycrisp, Braeburn, or Golden Delicious apples, or a mix of all three. Honeycrisp apples err on the sweeter side, with a distinct honey-like flavor; Braeburns toe the line between sweet and tart; and Gold Delicious apples intensify in flavor when baked.
Which apples bake best? For the best pies, crisps, and other baked treats, apples need to be firm enough to hold their own during the cooking process. We call these apples “baking apples” and to namedrop, they include Braeburn, Cortland, Honey Gold, Jonathan, Fuji, Gala, Granny Smith, Haralson, and Newtown Pippin.
