Which has more meat snow crab or Dungeness crab?
Dungeness Crabs, due to their larger size, may offer more meat and thus more protein per crab. However, the differences in nutritional benefits between the two are quite minimal.
That usually means Dungeness crabs will provide less substance than their counterparty. Although a Dungeness single crab can contain more meat per weight than a snow crab and have a sweeter flavor, a snow crab will provide more meat per weight than a Dungeness crab.
Quite simply, king crab legs can be double the price of snow crab legs! You might guess one reason why: king crab legs contain more meat, generally. So, they're priced more per pound and they'll weigh more, which drives up the price.
The meat-to-shell ratio for Dungeness crab is approximately 25%, making it one of the meatier crabs available. The average yield for a 2 lb crab is 1/2 lb of picked meat.
On average, a snow crab yields about 50% meat to 50% shell. So each snow crab leg cluster provides 7-8 oz. of meat, far more than the recommended serving size of 5 oz.
Snow crab has a sweet, if slightly more briny flavor than both King Crabs and dungeness crabs. It has a more fibrous texture compared to the other two as well.
Two Dungeness leg-clusters total a larger amount of meat than two Snow leg-clusters, but Dungeness meat is very mild, definitely the least flavor of American crabs. But there's a lot of it. Snow crab has a stronger marine flavor, and is richer, so you may find that less goes a longer way.

Taste: King crab vs snow crab taste very differently and their meat is usually used for different purposes. The King crab is known as the best of the best when it comes to crab meat and it is usually a delicacy and eaten on its own or with a buttery dip.
How many Dungeness crabs can one person eat?
Figure 1 ½ to 2 pounds of crab per person: That translates to ½ to ¾ pound of crab meat. For kids, Benjamin recommends splitting one crab between two young diners.
Unfortunately, due to the economy and recessions, there's not a huge demand for Dungeness crab, which many consider a luxury. Therefore, people aren't buying crabs. A way for crabbers to make up for the low prices is by catching more stock.
Pull away the inedible gray gills (also known as "dead man's fingers"), located on both sides of the crab and discard them along with the internal organs. After discarding them, break the crab in half so you can start to see the meat. Use your fingers and pull the sides apart and remove the lump crab meat.
Plan on 2 or 3 snow crab clusters per person as a side, which translates to 1/2 to 1 pound. If you serve snow crab legs as a main dish, plan on 5 to 6 clusters per person (1 1/2 to 2 pounds).
That's when it comes down to more “bang for the buck.” An average blue crab weighs about 1/3 pound and yields about 2 ¼ ounces of meat. Add up the math and you'll find it takes about 6 crabs to pick a pound.
Snow crab clusters are a popular alternative to king crab legs. The same rule applies to buying snow crab clusters for a dinner party. Picky eaters may not need any more than a half pound of crab clusters, but avid seafood enthusiasts can usually eat up to two pounds per person.
Snow crab. Snow crabs are among the top-tier of the species that can fetch exorbitant prices. Although the crustacean is also found in parts of Greenland, Eastern Canada and Alaska, the ones from Japan are particularly the most expensive crabs for eating whose price can run into thousands of dollars.
Many believe that the female crab's meat boasts denser, sweeter flavor, but agree that the amount of meat differs. Point-to-point comparison weighs the male crab at heavier, but flakier meat. In fact, NOAA reports the heaviest male crab this last season tipped the scale at 1.1 pounds and a 10.72” point-to-point length!
As for taste — while both crab species have an excellent balance of sweet, mild fish flavors, snow crab legs have a slightly more briny taste and delicate texture, while King Crab legs are meatier, with a texture more comparable to that of lobster.

Which crab legs taste better?
King crab has an undeniable reputation for its flavor. One bite will usually turn anyone's taste bud into an undying fan. It has a sweet, mild flavor, and is often compared to lobster. Snow crab meat is also sweet, but bears a subtle briny flavor not found in king crab.
Lump Crab Meat
This body meat has a “sturdier” consistency, which makes it perfect for crab cakes. Its taste is often said to be stronger than jumbo lump meat but less overpowering than claw meat. In other words, it's the best of both worlds!
Dungeness Crab
Found along the Pacific Coast of the U.S., Dungeness crabs are one of the most abundant varieties on the market. Often brown or purple in color, these crabs are larger than many common varieties (like Blue crab), but have much shorter legs than most of the largest varieties (like Snow or King crab).
The #1 Male crab, also known as a “Jimmy”, are typically the most sought after type of crab. They typically range from 5 ½ – 6 ¼ inches.
King crabs are not true crabs like Dungeness or snow crab, but are more closely related to hermit crabs.
